Our client this time is Mr. Chan, who operates a reputable high-end private kitchen restaurant in Central, Hong Kong. Last week, he contacted me via WhatsApp, saying he had a batch of top-tier champagnes stored away that he wanted to dispose of.
Upon meeting, Mr. Chan immediately explained his situation. Originally, his restaurant focused on French fusion cuisine, and naturally, the wine pairings mainly consisted of famous French wines and top champagnes. However, he recently noticed a strong market demand for high-end Japanese Omakase in Hong Kong, and thus decided to fully transform his restaurant's culinary theme to premium Japanese cuisine.
Consequently, the wine list also had to undergo a complete overhaul. A large number of top-tier champagnes in the cellar no longer perfectly matched the new menu. I followed him into the restaurant's professional temperature-controlled wine cellar, where rows of Krug Champagne came into view. From the photos Mr. Chan sent and the on-site inventory, this batch of wine was quite impressive: it included the rare 1998 vintage, the highly expressive 2002 and 2003 vintages, the elegant 2004 vintage, as well as Rosé and the classic non-vintage Grande Cuvée. Seeing these well-preserved fine wines, as an old wine enthusiast, I was quite excited.

When it comes to recycling, "professionalism" is paramount. I put on gloves and began a meticulous bottle-by-bottle inspection. When appraising champagne, especially a top-tier wine like Krug, several core elements are crucial:
