Wine Recycling Notes|Decoding the Karuizawa [Noh] Series
The History of Karuizawa, Starting with "Daikoku Wine"
The former Karuizawa Distillery (hereinafter referred to as "Karuizawa" for the place name, distillery name, and as an abbreviation for "Karuizawa Single Malt Whisky") was located in Karuizawa Town, Nagano Prefecture, and was originally a vineyard owned by Daikoku Wine Company. The company initially planned to build its first whisky distillery in Shiojiri City, but after that plan failed, it turned its attention to Karuizawa and successfully built the distillery in 1956.
Karuizawa's initial image was simply that of a blending base spirit appearing on the bulk transaction lists of blended whisky companies. When Daikoku Wine was acquired by Mercian Company in 1962, Karuizawa began supplying base spirits to Mercian's own blended whisky brand, "Ocean."
The subsequent events involving Mercian, Kirin, and Number One Drinks Company will not be elaborated upon here; interested readers are encouraged to research them independently.
Craftsmanship and Unique Flavor Profile
The Karuizawa style known to enthusiasts today—heavy sherry, heavy peat—did not form at its inception. In the early days of the distillery, Japanese Mizunara casks were predominantly used. It was only after 1960 that the distillery gradually began to use a large number of sherry casks and a small number of bourbon casks, in a ratio of approximately 9:1. The peaty flavor, however, was a continuation from Karuizawa's early days. Towards the end of the distillery's operation (estimated to be starting in the early 1990s), in order to cater to mainstream consumers and adapt to prevalent Japanese tastes, production shifted entirely to non-peated whisky.
Whether Karuizawa intentionally learned from or imitated certain Scottish distilleries is now unknown. The use of small stills (both wash stills and the spirit still for malt whisky were around 4000 liters, while mainstream capacities exceed tens of thousands of liters), Golden Promise barley (all imported from Simpson's Malt in Scotland), and direct-fired distillation (which only changed from coal heating to natural gas heating during its operation) — these three processes, almost entirely phased out in modern Scotland as being exceptionally uneconomical and extremely inefficient ("exceptionally" and "extremely" are not exaggerations), were consistently maintained by the distillery until its closure.
The 【Noh】 Series Karuizawa and Hanyu Distillery Bottling Number One Drinks Company's 【Noh】 series was conceived by David Croll and Marcin Miller of Number One Drinks Company.
The labels feature masks and costumes from traditional Japanese Noh theatre (which originated in the 14th century). This series almost exclusively uses Karuizawa whisky. The first Noh release was a 200ml bottle, exclusively available in the Japanese market. In other words, it was only sold during performances by the Noh theatre troupe 【Kamiasobi】.
David Croll explained: "The relationship with the Kamiasobi troupe was established by chance. When asked if we would sponsor their new play 'Mugiryu: The Tale of Malt Whisky,' it happened to be before Whisky Live 2008. They readily agreed to perform at Big Sight (the venue for the whisky exhibition). When we received a request not to use the Karuizawa or Number One Drinks labels, the Noh theatre masks and costumes immediately came to mind. Many members of the troupe understand and love whisky, and they were happy to participate in this activity. A royalty was paid for each bottle label to support their performances."
The first mini-bottle for the theatre troupe (labeled "Kamiasobi Original Single Malt Whisky") was a 12-year-old Royal Brackla 1993.

The Road to Fame
European wine merchants and whisky connoisseur circles brought Karuizawa its current fame. The Karuizawa brand entered the consciousness of non-Japanese individuals with a whisky review published in Whisky Magazine in 2002. It wasn't until 2005, when Dave Broom (the renowned spirits critic and writer) visited the distillery to gather material for writing, that a second article about Karuizawa appeared (interestingly, despite the distillery having ceased production five years earlier, Dave Broom was not informed of this by the Mercian staff who hosted him).
In 2007 and 2008, Karuizawa won "Malt Maniacs" (a famous European organization of independent whisky connoisseurs that holds an annual single malt award) gold medals for two single cask sherry single malts. From then on, the Karuizawa brand became officially known within European whisky connoisseur circles. Incidentally, the fame of Glendronach (especially it), Brora, Port Ellen, and Kavalan is also largely attributed to the "Malt Maniacs."
Number One Drinks Company, a UK-registered enterprise founded by Marcin Miller and David Croll, acted as an importer and distributor of Japanese whisky for the European market. They acquired all of Karuizawa's remaining stock from Mercian and Kirin, though it should be noted that when they first did so, Karuizawa was still an "unknown." Exclusive Karuizawa bottlings sold by merchants like La Maison du Whisky, The Whisky Exchange, and Taiwan P9 are also bottled by Number One Drinks.
The Beauty of Karuizawa
Karuizawa is not merely famous; it truly deserves its reputation. I have tasted several of its single sherry casks and single bourbon casks, and I was also fortunate enough to try one blended cask. Based on my personal preference, I believe the bourbon cask and blended cask expressions possess a higher caliber than the single sherry casks.
Focusing on its renowned sherry cask expressions, the peat flavor (primarily nitre, gunpowder, and roasted meat aromas, complemented by smoky notes of dust and earth) combined with the heavy sherry flavor (primarily chocolate, prunes, dried blackberries, and oriental spice aromas) is quite perfect. There is a clear hierarchy, distinct layers, and gradual transitions, with excellent balance, drinkability, and complexity.
Both peat and sherry are intense flavors, and while they have many devotees, few producers can handle them well, skillfully, and with grace. These two flavors can easily hide flaws or become extreme, and rarely achieve "clean," "correct," and "harmonious." Among similar intense styles, I believe only Karuizawa, Ardbeg (referring only to its 1970s works), and Lagavulin have achieved "clean, correct, harmonious, and profound" (if considering only heavy sherry styles, Glenfarclas could be added).
Karuizawa exhibits a tendency for excessive cask influence, and considering the extreme intensity of both heavy peat and heavy sherry, Karuizawa whisky requires decanting, and extended decanting at that, to fully appreciate its blossoming beauty. However, Number One Drinks primarily bottles single casks, with very few blended cask expressions, so there are some Karuizawa single sherry casks that perform mediocrely or suffer from imbalanced flavors even after decanting.

Frequently Asked Questions (FAQ)
Q: What is the highest value Hong K Recycling offers for red wine?
A: The recycling price for fine red wines is based on the Liv-ex international index and recent auction prices. For top-rated vintage single bottles of DRC Romanée-Conti, Petrus, Lafite, etc., the value can reach six-figure Hong Kong dollars. The actual quote needs to consider the vintage, fill level, label integrity, and proof of origin. We recommend WhatsApping the wine details to 94530784 for a detailed quote within 15 minutes.
Q: Do you still accept red wines with a low fill level or slightly damaged labels?
A: Yes, we do. While a fill level below the shoulder, or damaged/stained labels, may affect the valuation, Hong K Recycling will still make an offer as long as the bottle is original and sealed, with no signs of leakage or opening, and the vintage and wine type are identifiable. We guarantee no last-minute price reductions during on-site inspection.
Q: Do I need to provide the original purchase receipt when recycling fine red wine?
A: Receipts can serve as proof of provenance, which helps increase the valuation, but they are not strictly necessary. We will conduct a professional appraisal based on the label, capsule, cork, wine condition, and bottle code. Recycling is possible even without a receipt.
Q: Will there be a bulk discount if I sell multiple bottles of red wine at once?
A: Batch recycling (e.g., an entire case or cellar) usually results in a higher per-bottle quote, as it reduces multiple visits and logistics costs. The larger the quantity, the more room for negotiation. Please WhatsApp 94530784 with a complete list for a quote.
Q: How do you ensure privacy when recycling red wine?
A: Hong K Recycling strictly protects customer privacy; all transaction information will not be disclosed to third parties. For on-site recycling, we use discreet packaging, and the entire transaction process is kept confidential.
