02. Champagne with a century of family memory

As each year's harvest is different, there is no so-called standard recipe or proportion. Everything relies on the memory of experienced flavors, evoking unique tastes from memory. After manual sorting and pressing, the grapes are left to rest in 205-liter oak barrels. Krug has always insisted on using oak barrels for the first fermentation. Currently, the winery has 4000 oak barrels with an average age of 15 years, typically used for about 50 years.
After blending, the wine is bottled and stored in the cellar, where it must rest for at least six years, or even longer, before being opened again. Krug insists that champagne is only released when it achieves the perfect balance between freshness and richness.
