What is Salon?

Why is Salon so precious?
Besides its extremely limited production, Salon's aging potential is another selling point. While most Champagnes are best enjoyed upon opening, Salon can age for decades, developing complex flavors of nuts, toast, and honey over time. Leo said he once tried a Salon from the 1990s, and its depth and layers were completely unlike the typical impression people have of Champagne.
There's also an interesting story behind Salon. It's a sister winery to Delamotte. In years when Salon isn't produced, the grapes are allocated to make Delamotte. So some people say that drinking a good vintage of Delamotte is, in a way, drinking a "stand-in" for Salon.
Why did Leo switch to Burgundy?
"It's not that I don't want Champagne, but my palate has evolved," Leo said directly. He explained that while the bubbles and acidity of Champagne are appealing, at a certain stage of drinking, he began to seek quieter, more subtle wines. Burgundy Pinot Noir, especially from villages like Vosne-Romanée and Chambolle-Musigny, gives him a feeling of "listening to classical music"—quiet on the surface, but with much happening within.
He has already started acquiring several bottles of Domaine Leroy and Georges Roumier. With limited cellar space, the Salon set naturally has to make way.
Condition of this Salon set
Leo is very confident about his wines. The four Salon bottles have been stored in a temperature-controlled wine cabinet in his Central apartment, maintaining a constant temperature of around 12 degrees Celsius. The labels are intact, the foil seals are undamaged, and the fill levels are normal.
After our on-site inspection, we confirmed that all four bottles are in excellent condition. Salon's bottle design is very minimalist, with no superfluous decoration, making it easy to determine visually if they have been subjected to abnormal storage conditions.
Salon's market value
The price of Salon in the secondary market has been steadily rising, mainly due to its limited production and consistent demand. For example, the auction prices for the 2002 vintage have generally exceeded retail prices in recent years, as market stock becomes increasingly scarce. Leo is not in a hurry to sell, but he hopes to find a buyer who appreciates Salon just as much. He said, "These four bottles have been with me for several years, and I don't want them to go to someone who just sees them as an investment tool."
